Seven more Dutch Michelin star winners include two new 2-star spots; De Librije keeps 3

The Michelin Guide recognized seven new Michelin Star winning restaurants in the Netherlands at a ceremony in Maastricht on Monday, including two that took home two of the coveted stars even though they opened in the past year. De Librije in Zwolle maintained its position as the only restaurant in the country with a three-star rating, amid an emotional tribute to head chef and co-owner Jonnie Boer, who passed away in April.

Create by Guido Braeken is one of the two restaurants that achieved two Michelin Stars. Breken's restaurant opened in April in Eijsden at the Van Oys Maastricht Retreat. The restaurateur previously earned two stars with Julemont in Wittem. At Create, Braeken impressed inspectors with a turbot dish dry-aged for seven days. “With great satisfaction, I observed that Guido Braeken stayed true to himself and his finesse,” an inspector noted.

Michelin reviewers also gave two stars to Gem. by Soenil Bahadoer in Gemert, who previously helped De Lindehof achieve two stars in Nuenen before it closed down in the past year. With Gem., the inspectors said Bahadoer cleverly combines his Surinamese-Hindustani heritage with French culinary technique. His restaurant opened at the start of the summer, and the Masterchef Netherlands judge again managed to wind up with a ranking of Excellent at the Best Chef Awards just a few days ago.

Five restaurants received their first Michelin Star, including Olde Marckt. The chef at the Aalten restaurant, Bram Stoverink, was also honored with the Young Chef Award at Monday's ceremony. Two restaurants from Amsterdam, Choux from Merijn van Berlo, and Cue, by George Kataras, both won one star, as did Novaela in Delft from Daniel Duijster Gomero, and Restaurant Calva in Nootdorp, by Tom Beckers.

Two new Michelin Green Star restaurants were also awarded for their sustainability focus: Konijnenvoer in Arnhem, led by Demian Parasmo, and Tres in Rotterdam, under Michael van der Kroft. Konijnenvoer is notable for having been born out of the proprietor's student apartment, which was where food was prepared for catered events, followed by a colorful history in pop-up locations, a former squatted cafe, and ultimately the current spot on Weverstraat.

De Librije in Zwolle, operated by head chef Nelson Tanate and proprietor Thérèse Boer, retained its three-star rating, remaining the only three-star restaurant in the Netherlands. The ceremony was emotional following the April death of co-owner Jonnie Boer, 60, from a pulmonary embolism in Bonaire.

During the awards, Boer’s daughter, Isabelle Boer, held a framed photo of her father alongside an embroidered three-star apron while the De Librije team appeared visibly moved. Her father was also posthumously awarded the Mentorship Award.

Last week, nine restaurants were also added to the list of Bib Gourmand recipients in the Netherlands. The award is given to eateries that excel while providing a premium value to their diners. On Monday, Ylja Berends of WY. in Maastricht was handed the Sommelier Award, while Sandra and Michelle van de Bunt received the Service Award for their work at De Leuf in Ubachsberg.

Restaurants can also lose their Michelin Stars for a variety of reasons, such as a decrease in standards, a re-imagined concept, or when the owners and head chefs decide to put less emphasis on maintaining the award. Ten restaurants in the Netherlands lost their Michelin honors this past year, including two-star De Lindehof in Nuenen and one-star Coulisse in Amsterdam.

Both restaurants closed their doors this year, with the latter an unfortunate casualty to a bankruptcy case involving their landlord. Pikaar in Hilvarenbeek also closed, as did Fitzgerald in Rotterdam, Flavours in Weert, and Meliefste in Wolphaartsdijk.

Het Koetshuis first picked up a star 27 years ago for the Bennekom restaurant, but the title was taken away by the Michelin reviewers. The Koewacht restaurant, ’t Vlasbloemeken, at the Belgian border, also lost the star it first received in 2012. After five years with a star, Valkenswaard restaurant Eden lost the honor. Aan de Zweth in Schipluiden was first awarded the star over a decade ago, but the restaurant changed hands earlier this year.

Below follows the lists of the 120 restaurants with at least one Michelin Star as of October 2025, as well as the 23 chefs and restaurants with a Green Star, including Jonnie Boer. De Dyck's Martijn Koeleman lost this honor when the Woubrugge restaurant closed, as did Remco van Erp from Fermin in Rotterdam, which closed late last year.
