Eight new restaurants earn spots in 2025 MICHELIN guide Netherlands
The MICHELIN Guide Netherlands has added eight new restaurants to its prestigious list in April 2025. These new entries showcase a range of innovative culinary experiences across the country, with establishments in Amsterdam, Dordrecht, Rotterdam, Maastricht, Uden, and Sint-Oedenrode joining the ranks.
In Amstelveen, Bistro Toost serves an à la carte menu with Mediterranean influences. Dishes include crab remoulade with crispy toast and mustard vinaigrette, and hand-cut steak tartare with fries and mayonnaise. The restaurant features dried leaves hanging from the ceiling.
In Woudrichem, Cellar Door operates out of the historic old town hall. Chef Kalai’s menu includes venison filet with puffed red beet, knolselderij with coffee, and a wild sauce with pickled cherries.
In Amsterdam, CUE offers a menu led by chef George Kataras, featuring smoked flavors, fermentation, and Nordic influences. Dishes include aged seabass with Sichuan pepper powder, bergamot zest, and a sauce made from fermented asparagus. The restaurant also includes a basement listening bar with cocktails and DJ music.
In Maastricht, Haricot, founded by three former colleagues from De Librije, offers a French-inspired menu. Dishes include pearl-white skrei ballotine with fried oyster mushrooms and a spicy beurre blanc emulsion.
In Dordrecht, La Cebolla is located on the first floor of the De Witt cinema. Led by Cees Timmerman, the restaurant focuses on local ingredients and Mediterranean flavors, serving dishes such as full turbot with Indonesian spices and a cheesecake reinterpretation with Granny Smith sorbet and granola.
In Uden, Muggels by Gijs offers an à la carte menu in a farmhouse setting. Chef Gijs Hoevenaars, previously with De Lindehof, serves dishes like sashimi tuna with soy, citrus, and pickled vegetables.
In Sint-Oedenrode, Restaurant Bomas is under new direction by Inge Wollerich and Koen Bomas. The restaurant serves a fine dining menu featuring glazed langoustine with shellfish jus.
In Rotterdam, Xin, located on the ground floor of the Supernova hotel, offers Chinese cuisine with contemporary techniques. Dishes include marinated kingfish with daikon, puffed rice, and a spicy coriander coulis. Xin is included in the MICHELIN Guide.
