Three Michelin star De Librije to make stamppots for the homeless
Three Michelin star restaurant De Librije in Zwolle will soon be catering for a crowd quite unlike what they are used to. The restaurant is working with singer Theo Lens on a special event for the homeless - a concert combined with a delicious meal of stamppot, newspaper Trouw reports.
Stamppot is a traditional Dutch dish made from a combination of potatoes mashed with one or more other vegetables or fruit.
During the event Lens will play songs from his latest album while the his audience feast on a delicious, three Michelin star kale-stamppot. "According to the old recipe, slightly moist, simply a juicy stamppot", Therese Boer, who owns De Librije with her husband Jonnie, said to the newspaper.
Lens got the idea for this special event while he was filming for his latest album - Home at Last - in New York city. "There you have the subway line 7, which goes from Manhattan to Queens. It contains everything. Rich, poor, people from all over the world. I've been on it a few time. It fascinated me so much." he said to Trouw. "At one of the stations we saw a homeless man. He was not doing well and was lying there shaking. we dared not do anything, but it made a great impression." He could not get the image out of his head. "I wanted to do something to help these people."
He approached Therese and Jonnie Boer, who he knows from the business world, and they immediately agreed to help. And stamppot seems ideally designed for this kind of event. It can easily be made for a large group. "It is also extremely nutritious and it keeps you nice and warm", Therese Boer said.
The first stamppot concert will be held in Zwolle, in a Salvation Army building, followed by another one a week later in Amsterdam. The intention is to have a concert every month in a big city in the Netherlands.
