Herring is fished year-round. The catch of the right, 'volvette' (or full-fat) herring, suitable to be processed into the Hollandse Nieuwe herring is dependent on the period between the end of May and the beginning of July.
Hollandse Nieuwe herring is a very Dutch tradition, the first catch of the season is celebrated in many cities by competing for the best-tasting raw herring, which is a competitions from the Algemeen Dagblad.
The start of the new herring season has now been determined for Thursday, 12th of June.
